Valentine's Day 2018 recipes: Chocolate Peanut Butter Panna Cotta

This sweet and nutty panna cotta has a rich and velvety smooth texture. A perfect ending to a romantic meal for two and guaranteed to melt your Valentine’s heart.

Ingredients (serves 2)

For the panna cotta

1 leaf of gelatin

85g whole milk

85g double cream

1 tablespoon golden caster sugar

25g Chocolate PBfit Peanut Butter Powder

To decorate

Heart-shaped chocolates

Method

Oil two heart-shaped moulds, about 6-7 cm in diameter.

Put the gelatine leaf in a bowl of cold water and leave to soak for 5-6 minutes, no longer or it will start to break down and will be unusable.

Pour the milk and cream into a small saucepan, add the sugar and bring to a very gentle simmer, stirring all the time.

Once the gelatin has soaked it will have expanded slightly and look wrinkly, at this stage remove it from the bowl and squeeze out any remaining water. Add to the simmering milk and cream mixture, immediately remove from pan from the heat and stir to dissolve the gelatin completely.

Whisk in the Chocolate PBfit powder a spoonful at a time. Taste the mixture and adjust the sweetness to your taste. Leave to cool for five minutes then pour into the prepared moulds and leave to one side. When completely cool, put the moulds into the fridge to set for 1-2 hours.

To serve, dip the bottom of each mould into a dish of hot water to loosen the panna cotta, then invert the mould onto a small serving plate. With both hands, hold the mould securely on top of the plate, lift and shake downwards until the panna cotta is released.

Decorate the plate with heart shaped chocolates and a dusting of PBfit powder.
