Ah the humble apple pie.

Sweet, stodgy and super cosy. For many of us, the classic homemade pud is the ultimate comfort food.

Popular with families around the dinner table on a lazy Sunday afternoon, the smell of soft, warm, cinnamon apple is likely to tempt even the most satisfied of tummies after a roast with all the trimmings.

Unfortunately, with the main ingredients in apple pie being butter, sugar and flour (and then of course the lashings of cream on top), it's not really something we should indulge in every day.

However, this recipe below substitutes the naughty ingredients for some healthier alternatives.

It's naturally gluten-free as there is no flour in it, plus it is suitable for vegans if using a dairy-free yoghurt or custard.

So the next time you have the family over for lunch, try out this new recipe on them. They probably won't realise it's low in fat and calories.

Oh and by the way, it make a superb breakfast as well as dessert.

Apple pie baked oats recipe

Ingredients (generously serves one):

  • 1 apple
  • 40g oats (gluten free oats if coeliac)
  • 125g / 1 small pot of low fat vanilla yoghurt or custard (save half for the topping)

  • 1 egg white (or egg replacer/chia/flax egg if vegan)

  • 1 tsp ground cinnamon

  • 1 tsp baking powder

  • 1 tbsp lemon juice

Method

1. Peel, core and chop an apple and microwave it until soft. Then mash it into a puree.

2. Whisk the egg white/vegan egg in a bowl until fluffy.

3. Put all of the other ingredients in a separate bowl (leave half of the yoghurt/custard for serving later).

4. Mix until smooth then stir in the 'egg' mixture.

5. Line a small oven-proof dish with greaseproof paper, pour the mixture in and bake for 35 minutes on 180 degrees.

6. Top with the remaining yoghurt/custard.
