This week we introduce you to a new concept sweeping the country called Ghost Kitchens. One has popped up in Louisville to host a new restaurant called Witchin' Pizza. Plus, how a winning lottery ticket helped a popular food truck plant some roots in South Louisville. First, let's talk sandos and pizza. WICHIN' PIZZAFor those not familiar with the ghost kitchen concept it is NOT a restaurant run by spirits. A ghost kitchen is a delivery-only restaurant.There's no space for customers. Orders are made in one location, picked up by a delivery driver, and enjoyed off-premise. Got it? And this is how Wichin' Pizza came to be!Brittany Cummings got her start in the restaurant industry as a manager at Arbys for about 3 yrs however, her passion for sandwiches comes from her son David. "It's something I used to create for him when he was younger out of frozen pizzas, laughs Cummings, adding "I just got more creative now that I have experimented more with cooking as I've gotten older."The Louisville native broke out on her own in March of 2020, right after the quarantine began. Cummings wants people to know that anything is possible as long as you believe in what you're doing, even launching a virtual eatery amidst a global pandemic. Here's a story about how a lottery ticket paved the way for one Bosnian immigrant to share his passion for food. His name is Muamer Hasecic, but everyone calls him, Moe. Moe came to the United States in 1994 at age 15, spending several years in Arizona and Illinois working for the Denny's franchise. He eventually moved to Louisville and took a management position at Sonic in 2004. Fast forward to December 2011, Moe buys a few scratch off lotto-tickets, one of which ends up being a $40,000 winner. He started a pressure washing company with his winnings which helped him save for a food truck. In January of 2018, Weekend Burgers was born. Shocked at how well his burger business was doing with the crowds, he began looking for a more permanent spot. "I have looked at many spaces in last two years, nothing really that fit our need until we came across the location at 5600 National Turnpike," explained Moe. Moe says the new spot is more than just burgers. He offers an expanded dessert menu, including locally-sourced ice cream, milkshakes, sundaes and banana splits.Want to try them out? Buffalo Chicken Cups Ingredients:• 1/3 cup of Buffalo Sauce• 1/3 cup of ranch dressing• 4 oz. cream cheese, softened• 1.5 C of chicken, cooked and finely chopped or shredded• 1/3 Cup of Blue Cheese or gorgonzola crumbles• 1/3 C of Shredded cheddar• 24 wonton wrappers1. Preheat oven to 350.2. Place cooked chicken, cream cheese, ranch dressing, blue cheese and wing sauce in a microwave safe bowl. Heat for 30 seconds in the microwave, stir. Heat for another 30 seconds then mix until just combined.4. Bake in oven for 10 minutes or until edges are golden brown.5. Fill each wonton wrapper up with the buffalo chicken mixture.6. Sprinkle each cup with shredded cheese.7. Bake for another 10 minutes or until wonton edges are crispy and browned.8. Remove from oven and let cool.9. Enjoy!

Buffalo Chicken Cups

Ingredients:

• 1/3 cup of Buffalo Sauce
• 1/3 cup of ranch dressing
• 4 oz. cream cheese, softened
• 1.5 C of chicken, cooked and finely chopped or shredded
• 1/3 Cup of Blue Cheese or gorgonzola crumbles
• 1/3 C of Shredded cheddar
• 24 wonton wrappers

1. Preheat oven to 350.
2. Place cooked chicken, cream cheese, ranch dressing, blue cheese and wing sauce in a microwave safe bowl. Heat for 30 seconds in the microwave, stir. Heat for another 30 seconds then mix until just combined.
