“Oystergate” influencer Ruby Tuesday Matthews has announced her engagement and celebrated true to form with a plate of the food that made her famous.

The Byron Bay 26-year-old showed off a huge sparkling ring just weeks after debuting her new romance to her 229,000 fans.

In making the news official, Matthews kissed her new partner Shannan Dodd while showing off a emerald-cut diamond set in a gold band on her left hand.

“My favourite person,” she captioned the image which fans went wild for.

But it was her choice of celebratory meal which is bound to raise the most eyebrows — a plate of oysters, in a nod to the time she infuriated countless Australians at the start of a 2020 holiday to Sydney.

In what became known as “oyster-gate” Matthews defied the orders of Jetstar staff and left Ballina airport during a delay to dine on oysters at a swanky restaurant.

Furious travellers were forced to wait for her to take her seat 30 minutes after they were set to take-off.

Matthews showed off a plate of oysters on her Instagram stories alongside a picture of Dodd and a selfie showing off her enormous engagement ring.

The happy news comes just weeks after she and Dodd made their relationship Insta-official.

In May, Matthews revealed her relationship to fans with a picture of her with Dodd at a Bondi restaurant.

“Heart and tummy full,” she wrote.

Today, Real Housewives of Melbourne star Jackie Gillies was among the first the congratulate Matthews, writing: “'Congratulations beauty”, while PR queen Roxy Jacenko — who is also her manager — sent flame emojis to the couple.

“Nothing beats that feeling of falling madly in love,” she wrote two weeks ago.

Earlier this year, Matthews told how she was still being trolled over the oyster saga.

“Still going. Everyday deleting scummy messages from hatful people (sic),” she wrote.

Among the remarks she has removed included messages about her needing to “work off them oysters”.

“How were the oysters? Glad you could enjoy them while you ruined everyone else’s day,” wrote one follower.

“It’s a tough life getting all those free products. Go have some oysters,” added another.

Meanwhile others told her she “looks terrible”.

Matthews also defended herself after a radio segment surfaced in which a host called her a “cloth-eared bint”.

Melbourne Triple M host Lawrence Mooney and his colleagues laid into Matthews as part of a “You Can’t Do That” segment last year.

In it, Mooney refers to an influencer as a “social media whore that will sell your life for free stuff” and tells them to “choke” on their free meals.

“Those people who love a free feed or skincare product, because they’re prepare to prostitute themselves - you can’t!” he said in the May segment.

Meanwhile, fellow host Chris Page takes aim at Matthews, calling her an “absolute cloth-eared bint who held up a flight to eat oysters”, while Mooney replies: “This bird can go and get shucked”.

Matthews was furious to come across footage of the segment and took to her Instagram stories to say how she was “utterly gobsmacked” by the exchange.

“It really does go to show how low the human race is,” she wrote to her 219,000 followers.

“If all you can do is completely right (sic) off a single mum to make a segment, what do you really have going for yourself and your D grade radio show.”
